One Pot Stroganoff

My own version of Hamburger Helper beef stroganoff is pretty tasty, if I do say so myself. Reheats well for leftovers - or even cold!

Ingredients

  • 1/4 cup olive oil
  • 2 cloves garlic minced
  • 1 cup sweet onion diced
  • 1 1/2 lbs ground beef
  • 1/2 tsp cumin
  • 1 green pepper diced (about 2 cups)
  • 1 1/2 cups mushrooms sliced
  • 1 can cream of broccoli soup
  • 4 cups beef broth
  • 340 g bag egg noodles
  • Salt and pepper to taste

Instructions

  • Heat olive oil in a large frying pan on medium heat and add minced garlic
  • Once garlic is fragrant, add diced onion
  • As the onion starts to cook, brown the beef, adding salt and pepper and stirring occasionally
  • Once beef is nearly completely cooked through (almost no raw, red meat), add the mushrooms and peppers
  • Cook with a lid on for about 5 minutes
  • Carefully drain the oil/grease from the pan
  • Add cumin and stir occasionally, covering with lid for about another 5 minutes
  • Add soup, stir well
  • Add noodles and broth, stir to cover noodles. Not all noodles will be completely covered in liquid and that is okay - just continue to stir every once in a while
  • Bring liquid to a boil with lid on, this took about 5 minutes
  • Turn down to simmer, for another 5 minutes, before letting stand off the heat for 5 more minutes. Add fresh ground pepper
  • The dish shouldn't be watery, but creamy
  • Add a dollop of sour cream/plain Greek yogurt if you want it creamier or add some chilli flakes for some heat
  • Enjoy!
