Grilled Cheese Social Thin Me Up and Watch Me Go

Yeah, I know, I’m obsessed. But obviously when you start following my advice and head over to Grilled Cheese Social, you will be hooked too. This one is called Thin Me Up and Watch  Me Go, and it is made with goat cheese, turkey, avocado and peppadew. It’s perfect.

I won’t tell you how much time I spend scrolling through the Grilled Cheese Social Archives, looking for the perfect grilled cheese to suit what I feel like eating, but it is a lot. It’s hard to choose and I have a list going somewhere!

Alright, first thing’s first: ingredients. Last time I made a grilled cheese that had peppadew, I couldn’t find any at the store. This time, however, they were in the self-serve antipasti section of the deli and I was stoked! I imagined the size of bread I was using, and bought four peppadews, which turned out to be the perfect amount. This recipe also suggests using honey roasted turkey, which my store had none of, so I got regular turkey and added a drizzle of honey to my sandwich. Lastly (I already had bread and goat cheese at home), was the avocado which sent me into a slight panic because it took forever to find one that was ripe enough to be eaten 30 minutes from time of purchase. But I managed! Tip of the day, keep an eye on the avos when you go to the store so you are prepared for any situation they may be involved in.

This sandwich was super easy to build. I have never made a grilled cheese with goat cheese before, so it was interesting that you put it on the frying pan open face for a few minutes before sandwiching it together. I was skeptical about using a cooking spray when I could just as easily use butter, but I figured I should follow the directions! Not going to lie, I probably had it on a little too high of a heat and the outside burned… just a little! Not enough for me to throw it away and start over, though. So just be careful and pay attention. I hope you enjoy this one as much as I did!
