I was introduced to Overnight Oats several years ago by my sister in law and fell in love! I’ve been making this that recipe ever since. Naturally, I decided I should probably have my own recipe and what better way to do overnight oats than with some caramel and apple!
If you’re anything like me, you need to eat something before you can function. Some people need coffee.. I need food. I love overnight oats because they’re basically a grab and go breakfast if you’re in a rush but you’re not just eating some random breakfast bar from a package that’s full of garbage. They are also handy to take with you for after a morning workout! So I definitely recommend making this in a container that you can take with you.. juuust in case!
I will let you know that I’m super not picky and just used Gala apple because it is what was in the fridge, but you might want to buy a baking apple.. or use something that isn’t so crisp. That being said, if you already have apples at home, use them! Oh, also, leave the skin on! It is added fiber, which is never a bad thing for you.
Honestly, this recipe is so simple. Just put it together before you go to bed and it will be all set for you when you get up and need to head out the door. This recipe uses half of an apple and half of a banana, but you can totally double up to serve two or divide into two containers and you’ll have two days worth of breakfast. The overnight oats recipe from my sister in law honestly fed me breakfast for three days.
Quick tip: when you are making the caramel apples, be sure to stir continuously and watch closely – you don’t want the caramel to burn or it will taste funny.
This recipe uses organic coconut palm sugar, which you can buy (in a big bag) from Costco or you can totally buy it from a bulk foods store! It has a nice distinct flavour and you can sub it into quite a few recipes for baking. If you already have everything you need except this sugar, feel free to just use regular brown sugar if you don’t feel like making a trip out to the store (but you should still go to the store because you can get snacks…..)
