Umm, I truly do not know how the last time I made a post was in MAY, but here we are in JULY and this Cajun Shrimp Cesar Salad is a great recipe to come back with.

Anyway, long story short, I used to have a bit of an obsession with shrimp Cesar salad when my family went out to eat. Obsession or short phase? Regardless, I inspired myself because frozen shrimp was on sale at the grocery store and I figured, since I love Cesar salad – why not try out a Cajun Shrimp Cesar Salad for The Fancy Napkins.

The Fancy Napkins Cajun Shrimp Cesar Salad will feed 2 people as a meal. If you have never cooked raw shrimp before (because a classic shrimp ring comes cooked), don’t fret! It cooks super quickly and easily and literally changes colour so you know it is done. Plus, here is an article from Bon Appetit magazine to build your confidence when cooking shrimp!

I hope you like this one as much as Ian and I do! This is a super simple recipe to whip up on a weeknight – as long as you’ve got shrimp. So stock up! Fancy Napkins' Cesar Dressing

Salad dressing is so simple to do at home.

Ingredients

  • Two handfuls romaine lettuce
  • 3 tablespoons canola or other light tasting oil
  • 2 tablespoons white vinegar balsamic is tasty, too
  • 1 tablespoon lemon juice fresh or from bottle
  • 2 cloves garlic minced (who am I kidding, I usually use three)
  • 4 splashes Worcestershire
  • Salt and pepper to taste
  • 1/4 cup parmesan cheese grated
  • Bacon bits and croutons optional. I hate buying them and am usually too lazy to make them so...

Instructions

  • Chop and clean your Romaine, I highly recommend buying a plastic lettuce knife. No more rusty lettuce!
  • Two handfuls will probably feed two people, but use however much lettuce you want. The dressing works for up to an entire head of lettuce. Add your lettuce to your serving bowl
  • Sprinkle the parmesan over the lettuce (it might seem like a lot but just trust me)
  • Add oil, vinegar, lemon juice, garlic and Worcestershire to a glass measuring cup (sometimes I just use a coffee mug) and give it a good stir. I use a fork.
  • Add salt and pepper, to taste, stir vigorously.
  • Dress lettuce right before serving. Make sure you give the dressing one good last stir before doing so.

Cajun Shrimp Cesar Salad

Ingredients

  • 1 recipe of Fancy Napkins' Cesar Dressing above
  • 4 cups chopped romaine
  • 340 g bag shrimp; frozen uncooked, tail on, deveined
  • 2 tablespoons butter
  • 1/2 teaspoon each of cayenne powder garlic salt and paprika
  • 1/8 tsp thyme
  • black pepper to taste

Instructions

  • Clean and chop romaine lettuce
  • Toss with Fancy Napkins' Cesar Dressing
  • If your shrimp is frozen, run under cool water to thaw
  • Peel shrimp and remove tails while water is running
  • In a frying pan, once shrimp are thawed, melt butter on medium heat
  • Add shrimp to melted butter, toss to coat
  • Add all spices to pan and continue to toss
  • Shrimp will only take about 5 minutes to cook fully. The insides of the shrimp should be white - but not too bright.
  • Top cesar salad with cooked shrimp and enjoy!
