12 minute pasta

For this 12 Minute Pasta, I took inspiration from cacio e pepe – cheese and pepper pasta. Super simple and so delicious. This is a good one if you’ve got a few veggies in your crisper, you’re craving pasta and you don’t feel like putting in much more effort than it takes to boil the water for your spaghetti. And honestly, the time it takes to make this pasta is basically the amount of time it takes to cook your pasta!

This 12 minute pasta recipe will make a serving for one, so if you’re a lazy bachelor this one’s for you! (I’ve been asked to make recipes for so-called lazy bachelors) I happened to have a yellow bell pepper and fresh spinach in the fridge, so that’s how I came upon using these two veggies for this dish. A good pair! You’ll need some good parmesan cheese and fresh ground pepper to get the best flavour.

First thing’s first – you’ll put on a pot to boil salted water. While you are waiting for it to boil, dice up your bell pepper and garlic. Once the water is boiling and you start cooking your pasta of choice (pictured is linguini), that’s when you’ll add your oil and garlic to a frying pan. As the garlic cooks, add your peppers and continue cooking down. Add some salt and pepper, a handful of spinach and continue to toss. Once your pasta is cooked, take it directly from the pot and add it to the frying pan, tossing. Cover it with parmesan and fresh ground pepper, give it a toss and stir!

12 Minute Pasta (For One)

Ingredients

  • The amount you want to eat of your choice of pasta vague, I know
  • 2 tablespoons olive oil plus more to drizzle before serving
  • 2 cloves garlic minced
  • 1/2 yellow bell pepper diced
  • Handful or two! of fresh spinach, chopped if you prefer
  • 1/4 cup grated parmesan cheese
  • Salt and pepper to taste

Instructions

  • Put a pot of salted water on to boil
  • Mince and dice garlic and bell peppers
  • Roughly chop spinach, if you want
  • Once water is boiling, add your pasta and cook to the directions of your package
  • Heat oil and garlic on medium-low heat and add peppers before garlic is fragrant
  • Reduce to low heat once garlic is fragrant and continue tossing - add salt and pepper to taste
  • Add spinach, cook down
  • Once pasta is cooked, use a slotted spoon/ladle... something with holes... to transfer pasta directly from pot to pan
  • Toss continuously for a few seconds to coat the pasta
  • Add parmesan cheese, drizzle with a little more olive oil and toss
  • Top with lots of fresh ground pepper to serve
